Cook a leg of lamb for Sunday dinner, eat two thirds of it saving the remainder for Monday.
On Monday cut all the remaining lamb from the bone and dice it,
Dice 3-4 lbs of spuds, 1 onion and 3 carrots and put them in a large pan filled with water along with the bone, adding salt to taste(1/2 spoon)
Boil until the spuds are soft and remove the bone, adding the diced lamb, Boil for another 10 minutes and eat it for the rest of the week, dipping with wholemeal bread to ensure a healthy meal.
You can add more salt and pepper once it is in your dish.
