I have a lovely briam in the oven now.
Tomatoes, Aubergines, Potatoes, Courgette, Onion, Garlic, Parsley, Dill, Oregano and Olive Oil.
Made Stifado last night with Potatoes roasted in garlic, olive oil and oregano.

When we were in Corfu last week, I had a briam that the chef made for me that was off the menu. It was gorgeous with just a hint of spice. Green beans, potatoes and tomatoes..........ummmm lovely!
