I'm with you on this one.
I've been to many Christmas markets in many and various German towns and cities and in none of them have I noticed a beer tent.
I'm guessing that's because a) there's nothing cheery about ice-cold lager in a tent in the depths of winter ... and b) Decent lager isn't a novelty in Germany, you can just pop into any local hostelry, just like normal.
A hot mug of Glühwein, on the other hand, is a seasonal thing, it warms you inside and you're still sober enough to browse the other stalls.
